A Tasty Disappointment

I made dinner tonight.  The idea was to have a nice vegetarian meal, tasty yet filling. So I browned slices of eggplant in olive oil, then layered the eggplant slices with slices of tomatoes and slices of onion, topping the batch with shredded parmesan.  Then, I drizzled a quarter of a cup of balsamic vinegar over it, finally topping it with about 3/4 cup of bread crumbs.  I cooked it for 30 minutes at 350.

It was tasty, but cold as a corpse.  So, I cooked it for an additional 30 minutes at 375.

This dish has potential, but that potential was not reached tonight.  Not even close.  Oh, hell, it was a very tasty disappointment.

    All the ingredients sounds like you nailed it, John! What befuddles me, is why it didn’t heat up after a half and hour in the oven?? Are you sure it was on?! Smiling!
